Vegan Protein Blueberry Pancake Recipe

Pancakes are one of the most iconic breakfast foods and for a good reason! They are fluffy, delicious, easy to make and can be enjoyed as a savory or sweet option. The only drawback to pancakes is that most are very low in protein and high in sugar.

What You'll Need

  • 1 large banana
  • 1 large egg
  • 3 tablespoons of Greek yogurt
  • 1 teaspoon of vanilla extract
  • 1 scoop of KPOW Nutrition Vegan Protein (flavor of choice)
  • 1 cup of blueberries 

How To Make It 

  1. Slice the banana and place into a blender.
  2. Add egg, yogurt, vanilla, and Vegan Protein to blender.
  3. Mix ingredients until smooth thin batter consistency.
  4. Add blueberries and mix into batter.
  5. Place a frying pan over medium heat on stovetop. Lightly grease the pan with non-stick cooking spray.
  6. Pour a ¼ cup of batter onto the pan for each pancake.
  7. Cook pancake about 2-3 minutes until air bubbles appear on top of the pancake.
  8. Flip pancake using a flipper and cook on other side another 2-3 minutes.
  9. Repeat steps until all batter is used.
  10. Pancakes will appear golden brown when done. 

This recipe makes 4-5 pancakes.
