Vegan Protein Strawberry Blondies

What You'll Need

  • 1 ½ cups of all-purpose flour
  • 4 scoops of KPOW Nutrition’s Vegan Protein Strawberry
  • Pinch of fine sea salt
  • 1 teaspoon of baking powder
  • 1/3 to ½ cup of granulated sugar
  • ½ cup of almond or cashew butter
  • 1/3 cup of melted then cooled coconut oil
  • ¾ to 1 cup of non-dairy milk
  • 2 teaspoons of vanilla extract
  • ¾ cup of raspberries or ¾ cup of chopped vegan dark chocolate

How To Make It 

  1. Preheat your oven to 365°F. Take a 9x9” square pan and line with parchment paper. Then grease the top of the parchment paper.
  2. Grab a large mixing bowl. Blend together flour, KPOW Vegan Protein, sea salt, baking powder, and sugar.
  3. Grab a small bowl. If the nut butter is thick, place in the microwave for 20 seconds to make it smoother for stirring. Place the nut butter, coconut oil, milk, and vanilla in the small bowl. Combine with a whisk.
  4. Once the wet mixture is well combined, add it to the large bowl of dry ingredients. Blend until the batter becomes thick. If it’s too thick, then add a splash more of milk.
  5. Stir in the raspberries or chocolate until evenly distributed.
  6. Pour the batter into the lined pan and spread evenly using a spatula.
  7. Bake in the oven for 20-25 minutes. Once the blondies are golden brown around the edges, insert a tooth pick to ensure that it is cooked all the way through. Let the blondies cool for 30 minutes to an hour.
  8. Once cooled, slice into 9 squares. These protein blondies will store in a container for 5 days.
